When most people “roll their eyes”, they flick their eyes directly upward, usually as far as they comfortably go, then resume looking normally.
When someone who learned the phrase before the behavior does it, they usually go in a circular (ish) motion. Since most eye movements are lines, it’s usually pretty triangular: the key points are usually a diagonal up one way, then to the far other side, then to a diagonal low the first way. Thus, the eyes basically make a loop, so they “rolled”.
I’ve found that when people who learned the up-down way first try the circular motion, they might risk motion sickness, so experiment carefully.

It’s because when you lose motor control of your eyes, whether to unconsciousness or overwhelm of sensation, your eyes naturally tip backward into your head, or “roll back”. so to roll your eyes is to mimic losing consciousness. it’s a sarcastic gesture to indicate that you are Just Done with whatever is being said. (have you ever seen anyone faint? Their eyes lose focus, tip up, and then the lids flutter down. same happens with someone struggling not to fall asleep. same with someone overtaken with rapture, whether from an overwhelmingly delicious bite of food, a really great moment of someone digging a knuckle knowledgeably into a tight muscle, or an orgasm.)
but as a small child i remember rolling my eyes by looking in a circle, because i’d read the phrase in a book.
i try, now, when i write, to describe the movement more obviously as part of whatever the character is experiencing.
i’ve seen animated characters’ eyes roll in a circle, because it’s a humorous exaggeration of the natural effect. that’s often why a cartoon character that’s dizzy has the @ symbol for eyes. It’s not unrelated, gesture-wise. But yeah, you can roll your eyes by just tipping them back. If you’re really putting it on, flutter your lids too. The gesture’s often also accompanied by letting the jaw drop, which is another mimicry of losing consciousness. (Your picture was not posted)
