CASSEROLE SEASON #6: Savory Bread Pudding

This one I have never made myself, I just ate it today and got the recipe from the guy who made it for crew lunch at the farm.
He says the only thing that you have to measure is that the custard base is 4 eggs to 2 cups of dairy. Everything else is negotiable.
We had this to use up some extremely spicy focaccia someone brought over. And i mean, extremely spicy focaccia. The crew this year goes through hot sauce at an incredible pace, and needed none for this– but no worries, this was a feature of the bread, not this recipe, which is only spicy if you also use extremely heavily-spiced focaccia to start with. This is suitable for any bread you want, and ideally for stale bread you want to use up. (Tip: Bread that’s going stale can be thrown into the freezer and then later thawed once you have enough for a dish like this. Finding this out was a very useful thing for me, being someone who enjoys baking bread but lives with only one person most of the time.)
This is similar to a strata, which is made where you assemble the cut up bread and meat and vegetables into careful layers, then pour the egg mixture over the top, let soak, and then bake it. But this is slightly less-fussy.
Cut up slightly less bread than you think you’ll need, but have more available.
Sauté some ground meat in a pan. Add a bunch of vegetables. (Today, he used a pound of ground pork, unseasoned because we were out of sweet Italian bulk sausage, and added fennel and sausage seasonings. The vegetables were peppers, onions, carrots, some kale, and a bunch of garlic. That’s what we had.)
He cubed four big foccacias, and made a double batch of the egg-and-dairy mix, to serve six people. Mixed the bread into the custard mixture, stirred it well, then put it into a baking dish and put the meat and veg in on top, stirred it around, and then topped it generously with shredded cheese.
Baked the whole thing for 45 minutes to an hour until it was done– browned on top, cooked through. Served pretty promptly. It was pretty good. (Your picture was not posted)
