I am making crew lunch today and just on general speculation I figured I’d do chicken, since yesterday was a processing day, and I figured I’d part them before cooking them, so I went out and got two chickens and plopped them on the cutting board and got out the knife and started to cut the skin around the one thigh preparing to cut it off the carcass, and like uh. the knife uh. slid off the skin.

I took the knife, washed it off, walked right out of the house, went to the slaughterhouse, pulled out the special-purpose knife-sharpening belt grinder https://www.johnnyseeds.com/tools-supplies/harvesting-tools/sharpeners-hones/work-sharp-sharpener-7229.html#q=sharpener&lang=en_US&start=1 out there, and sharpened the knife, then went back in and resumed my work.

Now that I know how to sharpen knives with that thing I can’t be stopped.

Also yeah I cut myself a lot on sharp knives because I’m so used to dull ones but better that than cutting my fucking thumb off because it takes all my strength to force a dull knife through chicken skin. And using a sharp knife is like… you just draw where you want the thing cut and the cut opens up, it’s amazing. Yeah you still have to go through some bones but like. It helps a lot to be able to easily find them and not be wading around through rubbery un-cuttable chicken skin looking in vain for the joint.

(For real buy that thing from Johnny’s Seeds and stock up on the red and purple belts and never use a dull knife again. It is eighty-nine dollars and we have used the fuck out of it this whole season. Why would you not own this thing. You can sharpen harvest knives and such with it too in case you need to do that but I’ve never done that.)

Oh of course!
Oh I have a comment from you about penpals open in a tab somewhere... I'm not sure I can get Farmkid to consistently write to anybody, she's not a fantastic correspondent, and I only am here a little less than half the time so it's not like I can reliably lean on her to write back.
But! If you don't mind maybe not getting many letters back, I am sure I can at least get a postcard together at some point. And I can DM you the address, if you still want to do that. Let me know! :)
