Date: 2020-07-07 04:57 pm (UTC)The zip ties are to mark individual carcasses in the chill tanks so that we can pull them back out later to check temperatures-- we record temperatures hourly to demonstrate to the inspectors that the chill process is getting them down to a safe temperature in a correct amount of time. Taking a temp of a random carcass only gives a meaningful result if it's the same carcass each time.

Date: 2020-07-08 04:14 pm (UTC)I did do a tour of the whole thing in my Instagram Stories, which I then made a permalink Highlight out of-- I did it in batches so there's like half a dozen preachy topical slides at the beginning, then I did a whole tour of the facility before we started, and then later I did a set of little videos kind of touring through the process, so it's all lumped together in there.
