I am….nowhere near expert enough at making bread to be trusted with this question. I really just have a couple very very basic white bread recipes I like, and repeat those over and over adding different stuff to them. (My pickle bread and my sage & onion bread are basically the same recipe, except one is made in a dutch oven.) I’ve never even used bread flour.
However, I will refer you to some much more accomplished bakers—I know tumblr user
bomberqueen17 can even manage sourdough, and
chamerionwrites always posts beautiful pictures of their rye and wheat loaves. They can definitely give you better guidance than I can!
