Ha ha ha well. I haven’t checked the proof. And I cut off the tails too late so there’s some gross scum on the top that I’ll have to filter out or something. But it’s probably at least 100 proof and from the smell of it it’s quite different than the potato-based stuff I tried before.
I have another like 20 pounds of apples I cut up while I was stuck babysitting the still, to make another batch, but I’m out of ale yeast so I’m going to cheat and use the lees from the old batch. There are good reasons not to, but also perfectly good reasons to, so I’m not going to worry about it. I’m just going to let it get cold before I combine them.
And then there’ll be another batch in uh, two weeks, and it’ll be a bigger batch so I’m going to have to sit next to the still forgoddamn ever again.
I don’t know, is booze ever worth it? It seemed so cool when I decided I wanted to try it. It’s… not not cool.
My whole house smells like weird cider though. (I did the distilling outside, I’m not crazy, but I brought the still inside to cool off before I dumped anything out, and it’s still kinda hot.)
