saturday i made this recipe https://www.allrecipes.com/recipe/138131/bigos-hunters-stew/ and it made A Whole Lot.

i omitted one of the three kinds of meat, as i just didn’t have any stewing pork to hand. I made a bit of a roux instead with the vegetables. also i only used a little bit of pork jowl, some already-rendered lard to make up for the lack, and a smoked ham hock, which i stewed entire and then pulled out and cut apart to put the meat in and discard the skin/bones before serving. As for the sauerkraut, it was homemade, via Dude’s method, which IDK if I ever posted here; I did drain and rinse it, which was good, because this did turn out quite salty.

Oh and instead of canned diced tomatoes, I used some halved tomatoes I’d cored and shoved into the freezer in a bag at the end of the season, but I doubt that makes much difference.

It barely fit into my dutch oven.

Next time I make this I’m going to cut down on quantities of everything and attempt to do it in my instant pot. also i’m going to use venison in place of the stew pork. but the kielbasa was chefkiss and i feel like the smoked pork hock was good. I also loved the wide variety of seasonings, I don’t use marjoram often and it was a good application of paprika and hot sauce! (Your picture was not posted)

so. as we swan-dive into middle age, my dude has found himself put onto cholesterol-lowering drugs. it’s a genetic thing, his mom and sister have wildly different lifestyles but identical cholesterol numbers.

Generally we eat a reasonably good diet. I have a pretty good repertoire of vegetable-based dishes; we eat a lot of whole grains, restaurant food is something of an indulgence. But I… often cook with lard, it being the cheapest source of fat and good for many purposes. And I like to drink whole milk. And. And and.

Anyway I find myself suddenly worried about cholesterol. It isn’t something I’ve researched before. I have quite good cholesterol numbers, and those sorts of problems don’t generally run in my family. (This isn’t a moral thing, it’s just genetics. Don’t worry, my family’s abysmal lungs make up for it. I’ve had a cold for a month now. Yes really.)

So last night I had bought cupcakes at the grocery store, for us each to have one for dessert. And I poured us each a glass of milk to go with them.

Dude did not protest the cupcakes but joked that the milk was going to kill him. Out of curiosity he looked it up….

and found out that, unsurprisingly, the milk was much lower in saturated fat than the cupcake, and was in fact the healthiest part of the meal.

anyway idk how tf to cook low-cholesterol food and don’t know that i’m going to start. there aren’t any obvious places to eliminate it from our diet.
