I'm writing a scene from her POV at the moment where she first realizes "... oh no he's hot" about the main character, and it's been entertaining to have him not know where to look while she's working out, and she can't read him so usually she knows when people are ogling her but with him she's really not sure if he's interested or scared of her.
I like the dynamic that she realizes she's physically intimidating and is trying to figure out how not to scare him. My other source of inspiration for her is Jade from the Books of the Raksura, lol. Listen I like Big Muscle Girls!
