ah, i was just cooking them into a use-now sauce, though it’s in the fridge now. didn’t have enough to can though i discovered that the farm’s vegetable manager has a pot of tomatoes cooked down in the walk-in cooler, intending to can it at some point when he’s not too busy, so perhaps i will can some of it! it’s only six quarts to fill the water bath after all, and this roasting pan yielded a gallon… likely we’ll use it, though, and i’ll start another pot to can.
